Queen’s Jubilee: Events, Deals and Recipes you should try!

With the 4 day weekend right around the corner, many are planning ways to celebrate. From street parties to the most regal events, there is plenty to get involved in from the 2nd to the 5th of June. After all, Her Majesty is the first monarch to celebrate 70 years of service and that is definitely something to celebrate!

Whether you are hosting a party or just wondering what events are going on in and around London, I’ve some awesome tips and tricks on how to make your Jubilee weekend the best of all!

Tamarind Tiger gives away FREE chicken tikka bowls to customers with Corgis

To celebrate all things royal during the Queen’s Platinum Jubilee, Tamarind Tiger – the grab and go Indian restaurant on Baker Street – is giving away FREE Chicken Tikka Bowls to anyone that brings their corgi to dine with them in the week leading up to the Jubilee. 

As we all know, corgis are synonymous with the Queen and she’s rarely seen in her home without her beloved dogs, so the restaurant wants to celebrate her corgis for being with her every step of the way for the last 70 years.

Harvester

Harvester is also offering some regal deals that you should definitely get your hands on! From Thursday 2nd to Sunday 5th of June, you can grab a 3-course meal for £19.99 and can upgrade to a rack of ribs for just £5 extra! For the kiddies, they can also indulge in a breakfast for just £5.99! Now, that’s definitely a great way to celebrate!

Stonehouse

From Thursday the 2nd of May, Stonehouse also has a kids breakfast deal going on where you can grab a kids breakfast for £6.99 and it’s not just that. You can also enjoy a bottle of house fizz for just £9.99! However, if you are looking for something to sweeten your tastebuds, perhaps their offer of a Mini Freixenet and Strawberry Shortcake Sundae for just £9.99 might be more your style!

Nevertheless, all these great restaurants have got some awesome deals for the Jubilee celebrations! I wonder where I am going to visit on the bank holiday weekend…

One way to celebrate the Queen’s 70 years of service is by cooking up a storm with these delicious recipe ideas. From some delicious cocktail ideas to some much sweeter delights, I’ve got some amazing recipes that will definitely spice up your Jubilee party!

Celebratory Cocktails

The Jubilee Mule

The home of botanically brewed beverages, Fentimans, has rustled up a sensational summertime cocktail that is ideal for commemorating the Queen’s Jubilee! The Jubilee Mule is the perfect refreshment to drink all throughout the summertime with the zesty lemon and invigorating ginger beer.

Ingredients:

200ml Fentimans Ginger Beer

60ml Vodka

¼ English cucumber, diced

¼ English cucumber, sliced

½ lime, cut into 2 wedges

5 fresh mint leaves

Instructions:

  1. Muddle mint leaves in a cocktail shaker until crushed.
  2. Add diced cucumber and 2 lime wedges.
  3. Muddle until cucumber is crushed and limes have been juiced.
  4. Add more ice and vodka.
  5. Cover the shaker and shake until the outside has frosted.
  6. Strain the cocktail into a glass, and top with ginger beer.
  7. Garnish with sliced cucumber.

A Royal Martini

Wrens Kitchens have compiled some tangy cocktail recipes to try out over the Jubilee celebrations. This one, in particular, caught my eye and will definitely be one way to kick off your festivities- Whether you are celebrating at a street party or at home with family and friends.

Ingredients:

 Juice 3 clementines, plus 1 for serving  

75ml Vodka  

75ml triple sec

1 bottle prosecco or champagne, chilled 

Instructions:

1.     Pour your clementine juice, vodka and triple sec into a cocktail shaker and mix well

2.     Pour into your chilled martini glasses and top with your prosecco or champagne

3.     Serve with a thin slice of clementine and enjoy

Scots Guards Whiskey Espresso Martini

Now this cocktail, concocted by Drambuie’s mixologist, Freddy May, will definitely keep you awake for the bank holiday celebrations! Incorporating Her Majesty’s love for both Drambuie and Scotland in the much-loved espresso martini cocktail, this recipe is sure to go down a treat!

Ingredients:  

25 ml Drambuie Honeyed Liqueur  

25 ml Scotch Whisky   

50ml Espresso or strong cold brew coffee, decaffeinated if preferred  

Lots of ice  

Method:  

Pour all ingredients over ice and shake vigorously before pouring into a chilled martini glass.

Coronation Chickpea

If you are anything like myself, you would know that one thing that tops the dining experience is, having a range of foods available, suitable for vegans and veggies. Yondu is a 100% plant-based umami seasoning product that adds savoury flavour to all your dishes and it works particularly well with vegetables. In addition, it is also vegan, gluten-free, organic, non-GMO and clean label which makes me love the brand even more.

If you are looking for a canape to sweep your guests off their feet, then, by all means, you should definitely try out this scrumptious Coronation chickpea recipe! Not only will your tummy love it but your fellow vegans and veggies will also be thankful.

A plant-based version of the dish originally created for Queen Elizabeth II’s coronation which is fit for modern times. To be served with lettuce or as a filling for sandwiches or jacket potatoes.

Total time: 20 minutes

Serves: 2

Ingredients:

400g chickpeas in water (save the water)

1 carrot, peeled and shredded

2 Tbsp mango chutney

2 Tbsp sultanas

1 Tbsp Yondu vegetable umami

2 Tsp curry powder

4 Tbsp chickpea mayonnaise (can be shop-bought or homemade – recipe below)

Chickpea Mayonnaise ingredients:

50ml of chickpea water (aquafaba)

2 Tsp Yondu vegatable umami

1 Tsp mustard

1 Tsp apple cider vinegar

250ml vegetable oil

Instructions:

  1. To make the mayonnaise, combine chickpea water, Yondu, mustard and apple cider vinegar in a jar. Using an immersion blender, start adding vegetable oil slowly. Whilst adding the oil, move the immersion blender up and down until you get the desired thick consistency.
  2. In a bowl, combine the chickpeas, carrot, mango chutney, sultanas, Yondu, curry powder and mayonnaise. Mix all well together and serve cold.

Tom Daley’s Asparagus, Smoked Salmon and Egg Tart

This royal recipe, courtesy of British Lion Eggs, is perfect for entertaining and ideal for cooking for a crowd!

Prep time: 10 minutes plus 10 minutes cooling time

Cook time: 20 minutes

Ingredients:

1 x 320g sheet puff pastry

4 medium British Lion eggs

200g asparagus spears

150g cream cheese, softened

150g smoked salmon

A small bunch of chives, finely chopped

Instructions:

  1. Preheat the oven to 220C/200C Fan/Gas Mark 7. Unroll the puff pastry sheet and place on its paper onto a baking tray. Using a sharp, small knife cut a 1.5cm border around the edges (making sure not to cut all the way through). Prick the inside of the pastry all over with a fork. 
  1. Place into the oven and bake for 20 minutes, until golden and puffed. Remove from the oven and using a spoon carefully push the inside of the pastry back down. Leave to cool for 10 minutes.
  1. Meanwhile, bring a medium pan of water to a boil and add the eggs. Boil for 7 minutes then drain under cold water to cool. Peel and cut into quarters.
  1. Add the asparagus to the boiling water along with a generous pinch of salt and cook for 5-7 minutes until soft, but still with a little bite. Drain under cold water to cool and set aside.
  1. Spread the inside of the pastry with cream cheese. Top with the asparagus spears, smoked salmon and quartered eggs. Season lightly with salt and pepper and sprinkle over the chives. Cut into 15 squares to serve.

Jubilee Cupcakes

One way to sweeten things up a notch would of course be these gorgeous cupcakes by Bonne Maman. Their conserves are super delicious and so why not try this awesome cupcake recipe to blow your guests out of their seats at this Jubilee celebration!

Ingredients

50g unsalted butter, softened

150g golden caster sugar

1 large egg

100ml buttermilk

50ml vegetable oil

1tsp vinegar

145g plain flour

1tsp bicarbonate of soda

4tsp cocoa

2tsp red food colouring paste or gel

For the frosting:

300g icing sugar, sieved

50g unsalted butter, softened

125g full-fat soft cheese

12tbsp Bonne Maman Conserve, e.g Strawberry & Wild Strawberry and Wild Blueberry

Instructions:

  1. Line a cupcake tin with 12 large cases.
  2. Heat the oven to 180°C, 160°C fan, gas 4.
  3. Put the butter and sugar in a bowl and beat with an electric whisk until light and fluffy. Gradually beat in the egg, buttermilk, oil and vinegar.
  4. Add the flour, bicarb and cocoa with a large pinch of salt and beat everything together until smooth. Lastly beat in the red food colouring, adding extra if needed to produce a deep red mixture.
  5. Spoon the mixture into the cupcake cases and bake for 15-20 minutes, or until a skewer inserted into the centre comes out clean.
  6. Meanwhile, make the frosting. With the electric whisk, gradually beat the icing sugar into the butter. Add all the soft cheese and beat together for a good 5 minutes until light and fluffy.
  7. Pipe or spread the cold cupcakes with a ring of the frosting. Spoon the conserve into the centre and decorate with sugar crowns.

Vegan Cherry Bakewells

Of course, we cannot hold a celebration without a sweet treat for the vegans! This ‘Vegan Cherry Bakewell’ recipe, courtesy of Maryanne Hall from Viva!’s Vegan Recipe Club, is a perfect complement for your Jubilee celebrations!

Ingredients:

75ml plain vegetable oil or sunflower oil (refined)

140g caster sugar, preferably golden (most sugar in the UK is vegan but always check. Tate & Lyle, Sainsbury’s etc are suitable)

1 tsp almond essence

1 tsp vanilla essence

200ml soya cream

100g plain (all-purpose) flour

2 tsp baking powder

85g fine polenta (cornmeal)

50g ground almonds

2 tbsp natural vegan yoghurt, eg soya or coconut

1-2 packets of vegan ready to roll shortcrust pastry eg Jus Rol

Cherry jam (or any other jam of your choice…raspberry or strawberry works just as well)

Decoration:

115g icing sugar

1½ tbsp boiling water

¼ tsp almond essence

Glacé cherries

15 mince pie foils

Instructions:

  1. Heat the oven to 180ºC/350º/Gas Mark 4 (fan)
  2. Lightly oil the inside of the foil cases.
  3. Cut 15 circles into the shortcrust pastry and line the inside of each of the cases making sure the pastry stretches right up to the top of the case and over a little (pastry shrinks during cooking). If you don’t have cutters, you can just use the bottom of a glass or a small bowl.
  4. Mix together the oil, sugar, vanilla essence, almond essence and soya cream until you get a smooth, creamy consistency.
  5. Slowly add the flour, baking powder, polenta and ground almonds to the mixture and stir continuously until everything is completely integrated.
  6. Stir in the vegan yoghurt.
  7. Spoon a tablespoon of jam into the bottom of each of the pastry-lined cases.
  8. Spoon a small amount of the mixture into each of the pastry cases. Don’t fill them right up to the top because they will rise.
  9. Bake them in the oven for 30-40 minutes. Check after 30 minutes to make sure they have risen and are lightly golden. If not, then leave them in for another 10 minutes.
  10. Leave them to cool completely before decorating.

Decoration:

  1. Sieve the icing sugar into a bowl and mix in the almond essence (optional) and hot water.
  2. Mix thoroughly until you get a smooth, thick and creamy consistency.
  3. Spoon around a tablespoon of icing onto each cake. I like to get a consistency where it holds its shape but just starts to drip down the sides.
  4. Finish the cakes off with half a glacé cherry and serve.
